Blueberries!

Hey Flisties. Shaw's was having an amazing sale on blueberries (buy one, get two free). I'm giving one pint to my mum, but that still leaves me with two pints of blueberries. The catch is I don't like fresh blueberries. I'm looking for recipes other than just muffins and cake.

I pose this question for you: What is your favourite thing to make from blueberries. Bonus points if you can also post a recipe for me.

Magic Blueberry Lemon Pie

Ingredients:

1 can of sweetened condensed milk, lowfat if you wish
2 cups of blueberries, washed and cleaned up
1 tub of Cool Whip or other such topping, thawed
1 graham cracker crust
1/4 cup lemon juice

Direction:

Mix lemon juice and condensed milk in a bowl. Once thoroughly mixed, gently fold in the blueberries. Add mixture to graham gracker crust. Spoon the thawed whipped topping over the lemon blueberry mixtue in the graham cracker crust and garnish with additional blueberries. Chill for a good few hours.

Enjoy.

Blueberry Salsa

INGREDIENTS:
2 cups blueberries
1/2 medium red onion, minced
1 jalapeno pepper, seeded and chopped
1 red bell pepper, diced
3 Tbsp. fresh cilantro, chopped
1/4 cup lime juice
1 tsp. salt
1/8 tsp. pepper

Directions

Coarsely chop 1 cup of blueberries. In a medium bowl, combine the chopped and whole blueberries and the remaining salsa ingredients. Cover and let stand for one hour to blend flavors. Serve with grilled chicken or fish.

I tried it and oddly enough it's not that bad.
